"I needed some soup!!!!"

Well, summer is definitely over!!!! The change was sooo dramatic, that in a space of a day I had developed a cold just in time for the new school year. So with taste buds and appetite failing I needed something I could easily swallow yet, nourish my body. Eureka!! I needed some soup!!! As you know this summer we were growing tomatoes and a number (although small) ripened so I used some of them to make my own tomato soup. I made tomato and red pepper soup with cream cracker cheese melts (had no bread). Both were really delicious and are down below I have as always inserted some pictures too. Try them out and let me know how you found them in comment box below. Modifications are always welcome!!! Happy cooking and obviously eating!!!!!!

1. Tomato and red pepper soup with cream cracker cheese melts

Serves 1

Ingredients for tomato and red pepper soup

4 red tomatoes

1 onion (red or white)

1/2 red pepper

2 garlic cloves

Salt

Black pepper (ground or powder)

Ground garlic powder

Dried thyme (as much as you want)

Olive oil

1 tbsp. Worchestershire sauce (optional)

Medium cup size of lukewarm water

Method

Preheat oven at 200 degrees celsius. Place chopped onion, whole tomatoes, garlic and pepper in bowl with a dash of oil, salt, black pepper and ground garlic and toss around so all the vegetables are covered evenly.

Then place onto a baking tray and place into oven for 30 minutes roasting. Once time is up, take out and allow to cool

Then add medium size cup amount of lukewarm water to blitz/nutriblender container with cooled vegetables and blitz depending on texture you want for your soup.

Place blitzed vegetable soup into a preheated pot and cook down (further seasoning can be done depending on you taste preference. I added more ground garlic, black pepper, salt and Worcestershire sauce)

Ingredients for cream cracker cheese melts

4 cream crackers (to make 2 cream cracker cheese melt sandwiches)

1-2 tbsp. mozzarella cheese

Ground garlic powder

Method

Melt mozzarella in microwave (I know I was being lazy) for a few seconds. Once melted put ground garlic powder on top.

Pour or slice melted mozzarella onto one cream cracker and sandwich in with another cream cracker (had no bread and wanted a cheese melt so here you go!!)

Then enjoy dipped into tomato soup
