Veggie Burgers


I really like burgers in general, chicken, beef, chickpea etc. However, a lot of the time I make veggie burgers as for me its much easier to prevent cross contamination and worry about harmful bacteria (I am anal when it comes to cleaning meat and cleaning up after to prevent a salmonella outbreak in the yard!!). I generally make chickpea and kidney bean burgers with corn and peppers but I decided I wanted to try out a new recipe. The first recipe is inspired by one the veggie burgers from Nando's and the other is inspired by one I saw at Bacoa whilst in Barcelona. I thought I would put up the recipes for this as I haven't really done this for a while and I thought whoever was reading this might like to know how I made my veggie burgers.

First Recipe: The Green Burger

Ingredients

1 onion

200g Garden Peas

1 can Chickpeas

100g Corn

3 tsp. Mixed herbs

pinch of salt

2 tsp. black pepper

1 large Aubergine (for substitute burger buns)

Method

Sauté the onion and garlic until. Then place the rest ingredients into food processor and grind to preferred texture. Mix in the onions into the ground mixture. Form into burger patty shapes of preferred size then fry to cook through. Serve with bread buns or, you can do what I did and use grilled aubergine slices as a substitute which I seasoned with soy sauce and oil.

Second Recipe: The Red Burger

Ingredients

3 medium sized Beetroot

3 Spring Onion

1 can Kidney beans

3 tsp. Garlic powder

1 tsp. Salt

2 tsp. Pepper

1 tsp. smoked paprika

Method

Grater beetroot and fry off with spring onions that have been chopped in frying pan and cook for only a few minutes to get rid of the rawness. Then drain off kidney beans and place into food processor. Grind to desired texture. Combine the beetroot, spring onions, kidney beans and the rest of the ingredients. Mould into desired burger patty size and fry of in pan (you don't need a lot of oil in the pan). Serve with bread buns or, you can do what I did and use lettuce leaves.

Sides

Garlic and Chive Mayo: For one serving all I do is take 2-3 tsp of mayonnaise, 1 garlic clove and 1 tsp of chives, mix together and you have you mayo.

Home fries: I normally use one large/medium potato to a person. I chopped the potato into thin and small pieces added salt, pepper and a little oil (whichever one is up to you) and leave in oven at 180-200 degrees Celsius for an hour or until they are cooked.
