Vegan Lemon and Coconut Cake
As I stated in my previous blogpost for vegan orange chocolate cake, I also made vegan lemon and coconut cake. Like the vegan orange choc cake, this went down a treat and definitely appeased my sweet tooth.
Ingredients
200g Self-raising flour (you can use spelt or any alternative flour. Note: If you used coconut flour you made need to add more liquid)
200g Brown sugar
200ml Vegetable oil
2 lemons, zested and juices
Water
2 tsp coconut essence
1 tbsp. Desiccated coconut
125ml Apple sauce
Method
Preheat oven to 150 degrees Celsius
Place the demerara sugar and vegetable oil in bowl and whisk
Add apple sauce and flour to the sugar mixture.
Then add lemon zest and juice, coconut essence and desiccated coconut to the mixture. Add water is the mixture is not pourable enough.
Once all the ingredients were mixed together thoroughly, place the mixture into a baking tin and bake for 40-50 minutes in preheated oven.
Like I stated in my vegan orange choc recipe, I use a skewer to test if the cake is cooked in the middle. If some of the cake mixture comes off on the skewer, place the cake back in for about 10 minutes.
Once the cake was cool enough, I decorated my cake. I mixed a small amount of lemon juice and 2 tbsp. of icing sugar to make semi-runny icing to drizzle over the cake. I then used some coconut flakes to decorate.
